GroVia cloth diapers

Monday morning breakfast

I am in desperate need of going to the grocery store.  I normally go on Saturdays but this week I just did not make it.  We are out of eggs and are down to about a quarter gallon of milk.  So I got online last night and had to find something to make.  What I came up with was scones!  I have had a box of gluten free Simply Organic Chai Spice Scone mix in my pantry for awhile as well so while I whipped up some traditional scone for the kids and hubby I made myself the gluten free ones so I could enjoy some as well. These when great with the homemade jam I made yesterday.  This is the recipe I followed for the "normal" scones that got great reviews by the family even my picky eater Payton!

2 cups organic whole wheat flour
3TB sugar
2tsp baking powder
1/4 tsp salt
4 TB cold butter cut into 8 chunks
3/4 cups raw organic milk
You can then add dried fruit, nuts, chocolate chips, or whatever you want.  I did not add anything to mine.

Preheat oven to 425
Mix dry ingredients
cut in butter ( I threw every thing but the milk in the food processor.  I then pulsed it for about 30 seconds then added the milk.)
Add milk until dough forms a ball
kneed on floured surface for a few minutes then press into 8-10 inch ball and cut into 8 triangles
place on greased baking sheet and bake for 12-15 minutes.

The kids and hubby loved these and ate them ALL up in about 5 minutes!

For my gluten and now dairy free scones luckily there is a vegan recipe on the box!  It says to add 1/4 cup ground flax seed and 2/3 cups water but I just did 2/3 cups silk soy milk and left out the flax seed (I did not have any on hand, like I said VERY low on groceries!)  These turned out so Delicious as well! Click HERE for more info on the gluten free scone mix.

What do you like to put in your scones?  What is your favorite recipe?  Leave me a comment!

Strawberry freezer jam

Hello Mamas!  Today I made strawberry freezer jam for the FIRST time!  I will NEVER buy jam from a store again.  This is SO easy quick and saves a ton of money.  The cost break down is like this (rounded up to the nearest dollar so this is even a little over):
(12) 8 oz. freezer safe glass jars with lids $10
One container of freezer jam pectin $5
8lbs of strawberries HERE $11
Sugar (I buy in bulk so this is an estimate) $1
Toltal = $27
I ended up making about 136 OZ (with about 2 cups of strawberries leftover I just ran out of pectin).
So it came out to be about $.19 per oz. or $1.58 per 8 oz. jar.  That is not to bad if you ask me for fresh strawberry jam.  I am hoping this will last us about a year or close at least.  The recipe I followed was just on the back of the freezer pectin container but it was really simple.
1 2/3 cups crushed strawberries
2/3 cup sugar
2 tablespoons pectin
Mix pectin and sugar together add strawberries mix for 3 minutes.  Fill jars leaving 1/2 at top, let stand 30 minutes and thats it!  Hope simple is that!!!  I hope you all take some time to try this because it truly is SO easy my little helper Abbagail loved helping and zonked out on the couch after.  ENJOY!

Don't forget to write the date on your lids!

Abbagail passed out after we finished and she had her toast with jam :-)
